- The zest and juice of 6 lemons
- The yolk of 8 eggs
- 1 1/2 cup of sugar
- 1/2 cup cold butter cubes
- In a saucepan, whisk all ingredients except butter.
- Bring to a boil and simmer for about 10 minutes, stirring constantly until the mixture thickens.
- Pass the mixture through the sieve.
- Add the cold butter and mix until the curd is homogeneous. Allow to cool completely before serving.
