Here is a simple recipe but so delicious to do for your week meals and lunches! It’s a dish I’ve been eating since I was a little girl and a well-kept secret in my cookbook made by my mom. This book is one of my most precious possessions and I thank my mother for taking the time to write to me my favorite recipes of my childhood so that they do not fall into oblivion. So I share this beautiful recipe here today 🙂
Pork with peaches: for 8 servings
1 lbs of medium-fat pork
1 onions cut into cubes
Salt and pepper
3 tablespoons grated fresh ginger
1 large peach cane sliced in a syrup
1 cup chicken broth
2 cups celery slices
5 tablespoon cornstarch
1/4 cup maple syrup
Put the ground pork, onion and egg together and mix well. Form meatballs.
Then roast them in a little butter or olive oil. When the meatballs are golden, add celery and ginger. Cook for 5 minutes, stirring regularly.
Add cornstarch and mix well to coat meat and vegetables
Add chicken broth, peaches and syrup and maple syrup.
Boil for about 15 minutes until sauce is thickened and meat is cooked.
Serve on rice and garnish with green onions.
